Czech Koláče – A Sweet Tradition
Koláče are among the most traditional and beloved pastries in Czech baking. They are made from soft yeast dough shaped into small rounds with a gentle well in the center for the filling.
Classic fillings include sweet farmer’s cheese (tvaroh), poppy seeds, or fruit such as blueberries, strawberries, apricots, peaches and plums. Each filling often carries its own traditional topping: tvaroh koláče are commonly topped with a few raisins, while poppy seed or plum fillings are often sprinkled with sliced almonds.
When koláče are made with fresh fruit, they are typically finished with a buttery crumb known in Czech as posypka (also called drobenka or žmolenka), similar to a streusel topping. This simple mixture adds a delicate sweetness and light crunch that pairs beautifully with the soft yeast dough and juicy fruit.
Koláče can be baked as individual pastries or as a larger sheet—like the classic plum koláč—which is later cut into squares. However they are shaped or filled, koláče remain a simple, generous pastry that reflects the heart of traditional Czech home baking.
